With a little experience you can get it down to about 15 minutes per batch
(and with a lot of experience, 10 if it's served out quickly). We did about
10 batches in 2 1/2 hours when we took over other convention's con suite to
save the cost of a hotel room for our room party. The bowl, spoon, measuring
cup, and whisk only need to be rinsed (not scrubbed or soaped) between
batches, and don't forget to grab some of those "39 gallon trash bags" and
put one on the floor under the bowl.
We should definitely schedule a panel "how to make liquid nitrogen ice cream"
with both hands-on experience (signup sheet required, I expect), recipes, and
information about where to get LN2.
