The only problem I see is the printer. All in one printers, to my knowledge,
don't have Linux drivers.
What I'd recommend is getting a copy of Knoppix, booting off that, and making
sure all your hardware (including the printer) works. If not, there may be a
way to wiggle it into working, but it'll take tons of work and more knowledge
than I have.
(I can provide some support via e-mail and the occasional visit. I'm not a
linux guru, but I've used it as my primary home OS for years, and do tech
support in libraries, so I'm used to intelligent non-geeks.)
