Perhaps It could still work, if we cleared it with the hotel first.
(Is it too late to stick something like this into the contract or make
an amendment?) We could promise to include a disclaimer at both the
start and end of the panel that breaking into property that you don't
own is very much against the law and that anyone caught testing their
new-found m4d sk1llz in the hotel will be kicked out of both con and
hotel. I haven't been in a hotel that had regular key locks on the
guest rooms since I was a kid. Even if other doors in the hotel have
regular locks, con-goers snooping around in those areas will look a
lot more suspicious than in the "common areas" which should be some
deterrent.

Worst they could say is no.
